Eggless Cakes Made Easy

Learning to bake eggless cakes is a good trick to have up your sleeve, even if you do use eggs in your own baking. When baking for a kids birthday party or any other kind of gathering, there's a good chance that there will be a guest who can't eat eggs.

There are various reasons that some people don't eat eggs. A person might be a vegan (meaning they don't eat any animal products at all, including eggs and dairy) or they might have an allergy or intolerance that makes coming into contact with egg products potentially dangerous.

What can I use instead of egg?

Ready-made egg replacer is very easy to find and should be available at a local supermarket that has a special diets section. If your supermarket doesn't carry special diet ranges then a high street health food store is likely to come to your rescue. Traditionally, eggs have been used to bind and leaven (make the dough rise) and these pre-prepared powder formulas do an excellent job in making sure egg-free cakes rise and cook just as well as their eggy counterparts. Bear in mind that the egg whites cannot be replaced as yet, so meringue is off-limits to allergy sufferers and vegans.

If you find yourself with no time to go to the shops, you can experiment with the following kitchen-cupboard ingredients to replace egg in your recipes. Just check the amounts and make the right substitutions.
•    2 tbsp cornstarch = 1 egg
•    2 tbsp potato starch = 1 egg
•    1 heaping tbsp soy powder + 2 tbsp water = 1 egg
•    1 banana = 1 egg in cakes.

What can I bake with egg replacer?

Whatever you like! There is virtually no cake that can't be made without real eggs. Vegan baking has been a huge trend on online baking blogs for a couple of years. These are our picks of the best vegan baking blogs and recipes:

"As a vegan, thank you for posting this. I have fed vegan treats to all my guests and they never know the difference. In fact, they LOVE my cakes and bakes! Eliminating dairy from diet can have very positive health effects. Other egg substitutes are 1/4 cup of applesauce or 1 tbsp crushed flax seeds with 1/4 cup of vegan milk. Both work brilliantly and if you use banana as an egg replacer (I usually use only 1/2 per egg) you don't taste it in the cooking but occasionally require a little liquid, such as water or vegan milks for a good consistency in cakes.

Thanks for posting! :)"

"Oh my goodness, thank you for raising this issue! My young son and I love to bake together but his egg allergy means I am always nervous about how much of the finished product I should let him have. I had never heard of egg replacer and now can't wait to try it. Once again, thank you!"

"It is so nice to see other people's blogs about eggless cakes! I have egg allergies and all I do is experiment with normal cake recipes and replace the egg with different ingredients. I have even started baking for children's parties as egg allergies are becoming more common."

"Hi I would like to comment on Laurens request for Diabetic cake recipes as I have never heard of these before. I have been diabetic for over 17 years now and on insulins for more than 14 years. i was always told by my Diettion that as long as you eat things in moderation there was no need for special recipes jams etc. Everyone needs a certain amount of sugar for energy anyway and its not just the sugar in a product that puts your blood glocose up its the amount of carbs which are in the likes of flour so even if you used a sugar sub it wouldnt make much difference. So indulging in a small piece of cake or chocolate straight after meals shouldnt make any difference to your blood glucose or HBa1c control. "

"I tried making simple fairy cakes with an egg-replacement powder (not the Allergycare brand one). I followed the instructions on the packet to make up the 'eggs' and made the cake as normal. However, the cakes came out hard, oily and dense - nothing like the light fluffy ones baking with eggs produces. I've since been put off trying the powder again, as the results weren't edible at all and it wasted so many ingredients. Does anyone have any tips or recipes for baking with egg-replacement powder? "

"I am into industrial production of soft cup cakes with cream filling. Each single production batch is about 27kgs. I am currently using the following recipe:

Flour 7.65kgs
Sugar 7.65kgs
Eggs 6.225kgs
Vanilla powder 175gms
Emulsifier 270gms
Glucose 650gms
Glycerin 780gms
Baking Powder 270gms
Salt 65gms
Water 650gms
Oil 2.839kgs

Can someone please recommend what eggs replacer I can use that would keep my cakes quality consistent and as well as reduce cost and make it suitable for vegetarians.

Thanks

Fares (you can email me at [email protected])"

"Great advice as one of my granddaughters friends is allergic to eggs. Another trick than my Nan told me from the war is to use a teaspoon of malt vinegar in place of an egg. This works too and you cannot taste or smell the vinegar. "

"I've had an egg allergy for 14 years now and love baking. I wanted to join a cake decorating course and wasn't allowed due to my egg allergy so it's great that that magazine has come out so that I can make all the pretty cakes that everyone else does. I have also set up my own blog with my egg free recipes so hopefully other egg allergy sufferers can still make delicious food. Keep up the good work with these blog posts!
